ผักชีลาว is dill, an herb known for its fine, feathery leaves and distinctive fresh aroma. Although the name contains ผักชี (“coriander”) and ลาว (“Lao” or “Laos”), the whole expression is the established Thai name for dill and should be learned as a single unit. It is especially common in northeastern and northern Thai cooking. Its leaves and tender stems are added to dishes such as แกงอ่อม to provide aroma and flavor. When sold at a market, a bunch may be counted with กำ or มัด.

Usage
