ผัก often refers to vegetables collectively rather than to one particular item. กินผัก means “eat vegetables,” and ซื้อผัก means “buy vegetables.” The noun itself does not change for the plural. It also appears in many established names for vegetables and herbs, such as ผักชี “cilantro” and ผักบุ้ง “water spinach.” These names are best learned as complete words. The classifier or unit depends on what is being counted: ชนิด for kinds, ต้น for individual plants, and กำ for bunches.
